Meet The Chef – Cesar Gallegos
“I grew up in New Mexico where my appreciation for food started by watching my grandma and mom in the kitchen. They have taught me to uphold my family’s traditions of age-old culinary customs and recipes that have been preserved and taught to me, which inspired me to become a Chef. I have more than 17 years of experience in the culinary industry and received my culinary degree in 2000 from the Texas Culinary Academy in Austin. I have been recognized at both the March of Dimes Signature Chefs Auction and the Texas Legislator’s event for ‘Best Food and Chef Station.'”
The Dish
Scallops paired with a parsnip puree, truffle honey, sweet potato crisps, fall greens and celery hearts.
Tasty Tips
“Your style is defined by the risks you take and the flavors you invent. I love all cuisines and like to think outside the box when customizing menus for our clients. My advice to all the brides is to have fun when choosing your menu and think about what is most important to you as a couple and what brought you together for this very special day.”
