Meet The Chef – James Sparks
“I moved from San Diego in 1995 to begin a new stage in my life. I quickly decided to go to culinary school here in Dallas for five years. I worked in fine dining restaurants and hotels during my apprenticeship. Eventually, I landed with Gil’s Elegant Catering in 1999 and have designed and executed about 350 events a year ranging from 200 guests up to 6000 guests over the past 17 years”

Tasty Tips
Q: What advice do you have for brides who are trying to decide between a sit-down vs. buffet style meal?
A: “They are very different types of food service, it all depends on the feel that you want during dinner time. Plated dinners are more quiet and elegant, but station food service is interactive and keeps everyone moving and mingling. Flexibility and customization are a must in a time where the population is more educated in food than ever before.”
